Although a lot could be left out, I feel a series would be better for character development and other storylines. I'm not sure there is really a demand for it though.

Agreed. 3 or even 4 films could have covered almost everything. With that they could have grabbed other novels/characters and story lines as well. I am really surprised that they couldn't find funding with, what I perceived, the success of LOTR and Hobbit.

At the end of the day they tried to cram a story that took 7 books into a hour and a half long movie. It was never going to work with that approach. They really needed to just commit to a multi picture deal with a director / writing team that had a single vision. Doesn't have to be 7 movies, there's a lot of stuff in the books that wouldn't need to make it into the movies, but they almost certainly could have accomplished it in 3.

I have yet to see the movie and doubt I ever will. Maybe one day someone will actually adapt the story correctly. It's gonna have to be a series. Can't be done correctly via movies.

I really think the concept of the movie was wrong. All the actors were okay but the actual story and subsequent presentation (visual/audio/writing) were all lacking. I did not want fan fiction I wanted something that I've spent a lifetime reading and thinking about. A pure adaption would be unreasonable to expect but this wasn't even put together well.

And McConaughey struck me as a terrifically awful Walter O'Dim. From the little I saw, he struck me as just the worst in that role. I've never seen the movie. I doubt I ever will. So my objections really aren't all that fair. But those trailers sealed it for me.

There are some differences though the biggest being the ending. I read the book after seeing the movie a bunch of times and didn't have any issues with "casting". It also helps that FIGHT CLUB is short quick read.
