I do like the work of Mike Bohatch, but I'm not sure if he's stopped working in that arena to concentrate on a 'day job' as his old site is no longer there, and redirects to something else
Howdy
New to the forums but by no means new to CD. I'd like to suggest my good pal Tim Vigil. Here are a few of his pieces that I think will give you a good cross sample of his work. He is most well known for his comic work on "Faust: Love of the Damned" and "Gothic Nights" but as these pieces show he has progressed more towards illustrative work.
Medusa
Music of Madness
The CryptFeaturing the Countess Ravenous from his book "Gothic Nights"
Rise of Cthulhu
Tim has mad painting skills as well, sorry about the flash reflection on the right
I'd also throw a big thumbs-up for Berni Wrightson who does that wonderful gnarly old-school work.
I'd also like to throw a Nova Scotia hat into the ring and suggest Peter Francis - the gent who did the artwork for my latest e-book SUDDEN DEATH OVERTIME - a touching tale of hockey and vampires.
My pick would have to be Glenn Chadbourne, absolutely love his art that I have seen. Tomislav Tikulin would also be good, as would Canigula though. It's for Zombies, so am sure realism isn't as important as it could be for some other covers, but another one I am a big fan of is Keith Minnion, though I don't know if he'd do Zombies as it doesn't seem like it'd be up his alley.

We used Vince for our Simon Clark novella, Stone Cold Calling. Very talented guy...and so easy to work with. Along with doing wraparound cover art he did some black & white internals too.
